Coconut Marble Cake

INGREDIENTS
- 1/2 Cup Cold-Pressed Coconut Oil, melted
- 1 Cup Granulated Sugar
- 2 Large Eggs
- 1 Tsp Vanilla Extract
- 1/2 Cup Whole Milk
- 1 3/4 Cups All-Purpose Flour
- 2 Tsp Baking Powder
- 1/4 Tsp Salt
- 3 Tbsp Cocoa Powder
- 2-3 Tbsp Water, warm (for mixing cocoa)
INSTRUCTIONS
Step 1: Preheat your oven to 350°F (175°C). Grease and line a 9x5-inch loaf pan with parchment paper.
Step 2: In a mixing bowl, whisk together the melted coconut oil and sugar until creamy. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
Step 3: Add the milk and mix well. Sift together the flour, baking powder, and salt in a separate bowl. Gradually fold the dry ingredients into the wet mixture until smooth and lump-free.
Step 4: Divide the batter into two portions. In one portion, mix in the cocoa powder and warm water until evenly combined.
Step 5: Alternate spoonfuls of vanilla and chocolate batter into the prepared loaf pan. Swirl gently with a skewer or knife to create a marbled effect.
